Lemon Grass

When people think of the tastes of Thai food, lemon grass is one of the main flavours most remember.

Lemon grass is just that; a variety of grass, with coarse long flat outer leaves that are usually cut away and discarded, but can be used in Thai medicinals when properly prepared. The softer more tender core is used in a number of curry dishes, it can be prepared by bruising, slicing finely and even pounding into a paste using a pestle and mortar. A favourite dish it is used in is Tom Yam soup, here it is added whole !
