What would we do without chillies in Thai cooking?.

There are many varieties of chillies used in thai cooking the meanest of the bunch has to be Prik kee noo, some polite cooking reference books call these birds eye chilli, however they are more correctly known as mouse dropping chilli, as the name implies about the size of mouse droppings, green or when ripe red, they are very fiery hot.
